🇵🇹 Pastéis de Nata – Portuguese Custard Tarts 🥧✨

1. Prepare the pastry
Roll the puff pastry into a tight log. Cut it into small pieces and place one piece into each muffin or tart mold. Press the dough with your fingers to cover the bottom and sides evenly.

2. Make the custard
In a saucepan, mix the flour with a little of the milk until smooth. Add the remaining milk, sugar, cinnamon stick and lemon peel. Cook over medium heat, stirring constantly, until the mixture thickens slightly.

3. Add the egg yolks
Remove the saucepan from the heat and let the mixture cool for a few minutes. Remove the cinnamon and lemon peel. Whisk in the egg yolks and vanilla extract until smooth.

4. Fill the pastry shells
Pour the custard into the prepared pastry shells, filling each about ¾ full.

5. Bake
Preheat the oven to 250°C / 480°F. Bake for approximately 12–15 minutes, or until the pastry is golden and the tops of the custards have developed dark caramelized spots.

6. Cool & serve
Let the Pastéis de Nata cool for a few minutes before removing them from the molds.

For the authentic Portuguese experience, sprinkle the tarts with a little ground cinnamon or powdered sugar before serving.
